"Hold over" means to keep something or someone for a longer period of time than originally planned. For example, if a movie is popular, it might "hold over" in theaters for an extra week or two. Or if a friend was supposed to leave town on Sunday but ended up staying until Tuesday, you could say they were "held over" for a few extra days. It's usually used when something is extended or delayed, and it's often related to schedules or deadlines.
