"Spread out" means to move things or people further apart from each other. For example, if you're in a group with your friends and you're all standing close together, you could say "can we spread out a bit?" to suggest that everyone take a few steps away from each other to create more space. Or, if you have a bunch of papers on your desk that are all piled up together, you could say "I need to spread these papers out" to mean that you want to separate them and make them take up more space on the desk.
