The expression "with your eyes shut/closed" means doing something very easily and without much thought or effort because you have done it many times before and know it very well. For example, if you are a professional basketball player, you might be able to shoot a free throw with your eyes shut/closed because you have practiced it so many times. It can also mean doing something without paying much attention or being fully aware of what you are doing. For example, if you walk the same route to work every day, you might be able to do it with your eyes shut/closed because you are so familiar with the route.
